Bagels, one of the popular pieces of bread in New York, USA, are similar in appearance to doughnuts, but doughnuts are fried bread, while hard bagels are made from a leavened flour dough, kneaded into a circle shape, put into water and boiled over, and then baked.


The harder and crisper the outer crust is baked, the stronger the flavour.

Method


1. Dissolve dry yeast in warm water. salt, sugar, and the remaining water mix well and set aside.


2. Pour all the ingredients together and mix into a dough, knead until smooth and not sticky.


3. Cover the dough with plastic wrap and let it ferment for 15 minutes.


4. Divide the dough into 80g of each loaf, then roll out the dough with a rolling pin to form an oval-shaped crust.


Roll up the dough and slowly pinch the dough together with your fingers from left to right, so that the dough is tightly rolled up and the ends must be tight and together to avoid cracking when baking.


Then combine the two ends into a circle, and ferment for 20 minutes.


5. Bring the sugar water to a boil, then place the fermented dough into the pot and cook for 1 minute on each side, then remove and drain.


6. Put the cooked dough into a baking pan and bake in the oven at 320℃ for about 20 minutes.


When the surface of the bread is golden brown, you can take it out of the oven and slice it after it cools.
